Spooky Fruit Platters by Amy

Ingredients:
2 ounces white candy melts chopped
2 bananas
8-10 strawberries
4-6 clementine or mandarin oranges
2-3 cilantro or parsley stems
3-4 mozzarella cheese sticks
12-16 pretzel sticks
4 kiwi
Candy eyeball sprinkles
Instructions:
Melt the dark chocolate and white chocolate in the microwave using short bursts of heat, about 20 seconds at a time, stirring between each round of heat until melted and smooth. Transfer to piping bags and snip off the tips.
Boo-nanas
Peel the bananas and slice them in half. Use melted dark chocolate to pipe eyes and circular “O” shaped mouths.
Killer Strawberries
Use a small, sharp knife to remove the tops of the strawberries so they can sit flat on a serving platter.
Use melted dark chocolate to pipe a “U” shaped mouth on one side of the top of each strawberry. Use melted white chocolate to pipe jagged teeth starting from the outer edge of the mouth and going in toward the center.
Orange Pumpkins
Peel the oranges. Stick pieces of cilantro or parsley stems in to give the impression of a pumpkin stem.
Pretzel Brooms
Peel open the mozzarella cheese sticks and cut them into thirds. Use clean, sharp scissors or a small knife to snip the bottom half of each piece several times to form bristles. Stick a pretzel stick into the top for a broom handle.
Franken-Kiwis
Use a small, sharp knife or vegetable peeler to remove the fuzzy outer skin from the bottom ⅔ of each kiwi. Slice in half and lay on a plate.
Pat the kiwi with a paper towel, then use melted dark chocolate to pipe a scar and a line for a mouth. Pipe two dots of chocolate, then stick googly eye sprinkles on to the face. Break apart pretzel sticks and stick them into either side of the kiwi for bolts.

Ingredients:
2 1/2 cups plain yogurt
3 tbsp honey or maple syrup
1 cup spinach, packed
1-2 kiwi, peeled and sliced into moon shapes
1/4 cup mandarin oranges, drained
1/4 cup frozen pitted cherries, cut in half
1 tbsp eye candies
Instructions:
Line a baking sheet with parchment paper. You can use a 9×9 baking dish, 9×13 baking dish or a 13×18 baking sheet, depending on how thick you want your bark.
In a blender, add in the yogurt, maple syrup and the spinach and puree until smooth. It will be thin.
Pour the yogurt mixture into the baking sheet and spread until you have an even layer.
Place the toppings all over the top of the yogurt.
Place the baking sheet in the freezer and freeze for at least 4 hours by preferably overnight.
Once frozen, take the baking sheet out of the freezer and break the yogurt bark into jagged pieces with your hands.
Serve and enjoy.
Mini Halloween Pizzas by Kaitlyn

Ingredients:
1 large pizza dough (homemade or store-bought)
6 pepperoni slices
1 black olive, sliced
6 ounces of pizza sauce
1 1/2 cups shredded mozzarella cheese
Instructions:
Preheat your oven to 425°F. Line or grease a baking sheet.
Roll out your pizza dough onto a floured surface. Using large Halloween cookie cutters or a sharp knife, cut out 6-7 mini pizzas (either pumpkins or ghosts or a combination of both) and place them on the baking sheet.
Spread about 1 tablespoon of pizza sauce evenly on each pizza.
Top with the mozzarella cheese.
Carefully cut a few pepperoni slices in crescent moon shapes, then cut out triangles for the jack-o’-lantern teeth. Cut a few more triangles for the eyes and noses.
Arrange the olives on the ghosts to look like eyes, and arrange the pepperoni pieces for fun jack-o-lantern faces!
Bake in the preheated oven for 10-11 minutes, until the crust is crisp and the cheese is melted. Serve!
NOTES:
You can easily double this recipe for more servings!
For a spooky green look, use pesto instead of pizza sauce, and try using a witch's hat or Frankenstein cookie cutter instead!
We used these large 4" cookie cutters to make our pizza shapes.
Bake time will vary slightly depending on your dough and the size of your pizzas. It will be significantly shorter than if baking the same dough as a large pizza, though. We found 10-11 minutes to be perfect for this size.
By opting for these low-sugar treats, you can enjoy the Halloween festivities without the sugar rush. Perfect for kids and adults alike!
